Our English crew member, Sophie Caldecott, shares her favourite go-to English scone recipe in case you want to make these scrumptious baked items to serve with cucumber sandwiches and tea (or sizzling chocolate) for some authentically Jane Austen–type refreshment alongside your book-club dialogue.

Elements

  • 1 lb / 460 g self-raising flour (in case you can’t discover self-raising flour, you’ll be able to add 1 ½ tsp baking powder and 1 ½ tsp baking soda to the flour and mix nicely)
  • 1 tsp high-quality salt OR 1 ¼ tsp kosher or coarse sea/Maldon sea salt OR 2 tsp Diamond Crystal salt
  • 4 oz / 115 g unsalted butter, room temperature
  • 2 oz / 60 g fine-ground white sugar
  • ½ pint / 290 ml milk
  • A bit further milk or one egg, crushed, to glaze
  • Strawberry jam, for serving
  • Clotted cream (obtainable on-line or at your native grocer) or whipped cream, for serving

Technique

  1. Preheat the oven to 450°F (230°C) and put together a baking sheet.
  2. Sift the dry components collectively (flour, salt, sugar, and baking powder/baking soda in case you don’t have self-raising flour), and mix nicely.
  3. Rub within the butter together with your arms to make a high-quality, evenly textured breadcrumb-like combination.
  4. Stir within the milk to make a tender dough.
  5. Sprinkle with slightly further flour to make it dry sufficient to roll out (you don’t need it to really feel sticky), and roll out to about an inch and a half or two inches in thickness. Reduce the scone dough into rounds (ideally utilizing a spherical scalloped-edged cookie cutter, however you can even use the highest of a teacup or spherical ingesting glass to chop easy rounds). Place on the baking sheet, with area round every spherical in order that they have room to rise with out sticking collectively.
  6. Brush the tops of the scones with egg combination or milk to glaze, and bake within the pre-heated oven for 8–10 minutes, till they’ve risen nicely and the tops have gone a pleasant golden colour.
  7. Permit to chill, and serve with strawberry jam and clotted cream (whipped cream will do in case you can’t pay money for clotted!).
